Healthy Banana & Dark Choc muffins

I have quickly become obsessed with these muffins! They are so easy to make, and all of the ingredients are staples in my pantry, and probably yours too! I love to have one of these for a morning or afternoon snack and pair it with a cup of my favourite herbal tea.

Recipe makes 10 muffins

Ingredients:

  • 2 cups of almond meal
  • 3 bananas (2 for cooking, 1 for decorating)
  • 3 eggs
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • pinch of sea salt
  • 1 cup medjool dates, pitted and roughly chopped
  • 1/4 cup coconut oil
  • 1/4 cup dark chocolate chips (or roughly chopped)

Method:

  1. Preheat the oven to 180 celsius.
  2. Add all ingredients, except for the chocolate chips, to a food processor or blender. Process or blend until smooth.
  3. Transfer to a mixing bowl and stir through the chocolate chips.
  4. Grease a muffin tin with olive or coconut oil or lay out patty pans in the muffin tin.
  5. Spoon the mixture into tin and top each muffin with a slice or two or banana.
  6. Bake for 35 – 40 minutes, until golden and cooked through
  7. Let the muffins cool down and enjoy!

Muffins will last in an air tight container in the refrigerator for up to a week.Β
