Raw Energy Bars

This recipe was the result of a craving for muesli bars. It is almost impossible to find a muesli bar that is free from artificial junk on the supermarket shelves, so I decided to have a go at making my own from real, wholesome ingredients and I even impressed myself with how well they turned out! These are high in fibre and protein to keep you full and satisfied, making them the perfect morning or afternoon snack! And as an added bonus, they last for up to a week in the fridge!

Raw energy Bars

Ingredients:

1-cup walnuts
1-cup raw cashews
2/3 cup rolled oats
1/3 cup pumpkin kernels
ยผ cup goji berries
1 ยฝ cup Medjool dates, pitted and roughly chopped
1/3 cup almond butter
ยผ cup coconut oil
2 tbsp organic honey
1 tbsp cacao powder
1 tbsp chia seeds
100g 70-80% cocoa dark chocolate

Method:

  1. Line a medium size-baking tray with baking paper. Combine nuts, oats, pumpkin kernels and goji berries in a food processor and process for about 15 seconds until a chunky crumb forms.
  2. Add the dates, almond butter, 2 tbsps of the coconut oil, honey, cacao powder and chia seeds and pulse until well combined and the mixture is sticking together.
  3. Transfer to the baking tray and press down firmly over the base. Place in the fridge to chill.
  4. Melt the chocolate and remaining coconut oil together in a pan. Once melted, take the base out of the fridge and use a spoon to drizzle the melted chocolate over it. Place back in the fridge to chill for 20 minutes or until completely set.
  5. Once set, cut the slice into squares or bars of your desired size and enjoy!

* Store in the fridge in an airtight container for up to 1 week.
