A seriously easy and super delicious dish! I love making Zucchini slice on the weekend and either using it as dinner one night during the week or cutting it into slices and putting into containers with salad for lunches to take to work. This is a huge favourite in my house with the boyfriend and family, but also has the huge tick of approval from every young human I have made it for too, making it perfect for the kiddies lunch boxes.
Ingredients:
- 3 zucchinis
- 2 carrots
- 1 large brown onion
- 3 rashers of bacon (optional)
- 1 cup grated cheese
- 1 cup whole meal self raising flour
- 1/3 cup cold pressed olive oil
- 6 eggs
- 1 ½ teaspoons curry powder
- 1 teaspoon chicken stock powder (vegetable powder if vegetarian)
- Salt and pepper to taste
Method:
- Preheat the oven to 180 degrees and prepare a large baking tray and line with baking paper.
- Grate the zucchini and carrots and finely chop the onion (and bacon if using it).
- In a large mixing bowl, combine the zucchini, carrot, onion, bacon, cheese, flour, oil, lightly beaten eggs, curry powder and chicken stock powder then season with salt and pepper.
- Pour the mixture evenly into the baking tray, bake for 60 minutes or until browned on top.
- Serve alongside your favourite salad, roast or steamed veggies.
