I love a good bowl of granola with coconut yoghurt and berries for breakfast or as a mid morning snack and this one here is no exception. Store brought granolas are often filled with excess sugar, preservatives and nasties that we just should not be putting in to our bodies. I created this because my love for granola was real but my love for packaged foods was not. These ingredients are all easily accessible and versatile. If you prefer a different nut to almonds, go ahead and switch it. Same goes for the cranberries, if you would prefer to use a different dried fruit then swap it over. I like to interchange the cranberries for dried apricots, dates or sultanas as a really simple way to switch up the flavours of the granola. Enjoy your granola on top of pretty much anything and everything!! Some of my favourites include: on top of yoghurt, smoothie bowls, nice-cream, porridge or just on its own as a snack with a piece of fruit.
ALMOND, CRANBERRY and COCONUT GRANOLA RECIPE
Ingredients:
- 2 cups oats
- 1 cup rice puffs
- 1 cup cranberries
- 1 cup pepita seeds
- ½ cup sunflower seeds
- 1 cup almonds, roughly chopped
- ½ cup coconut flakes (Shredded coconut also works)
- 1 tbsp cinnamon
- ½ cup rice malt syrup (or honey)
Method:
- Preheat oven to 180 degrees and prepare a large baking tray with baking paper.
- Combine all ingredients, except the rice malt syrup, in a large mixing bowl.
- Melt the rice malt syrup either on the stove or in the microwave and pour over the oat mixture. Stir well until mixed through.
- Transfer the mixture to the baking tray and spread out evenly
- Place tray in the oven for 15 minutes or until nicely golden, stirring the mixture at the half way mark.
- Let granola cool down for a couple of minutes, then transfer to an airtight container and store for up to 3 weeks.
*Makes enough for 10+ servings, I store mine in a large cereal Tupperware container. The idea behind the large quantities is to make it in bulk and then use sparingly over 1-2 weeks.
